INGREDIENTS

Chia Pudding

  • 1 cup coconut milk

  • 1 cup almond milk

  • 1/4 cup + 2 tbsp chia seeds

  • 2 tsp vanilla

  • 2 tbsp manuka honey

Blueberry Mousse

  • 1 cup frozen blueberries

  • ¼ cup raw honey

  • 4 tablespoons lemon juice

  • 1 tablespoon cornflour

  • 1 tablespoon water

  • 1 cup whipped coconut whipping cream

Vegan Marshmallow Fluff

  • liquid of 1 15-oz can chickpeas about 2/3 cup, chilled

  • 1/2 cup manuka honey

  • 1/2 tbsp arrowroot starch or cream of tartar

Chocolate Sauce

  • 1/4 cup coconut oil melted

  •  3 tbsp cocoa powder

  •  2 tbsp manuka honey 

  • 8 vanilla cookies, crushed

  • 4 pieces of dark chocolate

 

Chia Pudding

  • Place all ingredients in a bowl and mix well. Transfer to a sealed container and refrigerate at least two hours, or overnight.


  • Blueberry Mousse

    In a saucepan set over medium heat, cook frozen blueberries, honey and lemon juice until the honey melts and blueberries begin to break down.
    In a small bowl, combine corn flour and water. Add the slurry to the saucepan in which the blueberries are cooking and bring the mixture to a boil.
    Set it off heat and allow to cool completely.

    Meanwhile, using an electric mixer, beat the whipping cream until still peaks form.

    Carefully fold in the cooled blueberry mixture into the cream and refrigerate.


    Vegan Marshmallow Fluff

    Pour the chickpea liquid in the bowl of an electric mixer or large mixing bowl. Using the whisk attachment, beat at low speed. Slowly increase the speed to high. Once soft peaks have formed (about 5 minutes), add honey in a steady stream and arrowroot starch or cream of tartar. Continue beating on high for another 5 minutes, or until stiff, glossy peaks form. Peaks should be able to hold their shape.



    Chocolate Sauce

    To make the chocolate syrup, whisk coconut oil, cocoa powder, and manuka honey in small bowl until smooth.

    Assembly

    To assemble parfaits, begin with a layer of crushed vanilla cookies. Add a layer of chia pudding, then a layer of blueberry mousse. Top with a spoonful of chocolate sauce and a heaping amount of marshmallow fluff. Use a kitchen torch to toast the marshmallow.
    Finish the parfaits off with a sprinkle of crushed vanilla cookies, a drizzle of chocolate sauce, and a piece of dark chocolate.
