  1. The Allure of Cranberry Sauce: Cranberry sauce is a Christmas classic, known for its vibrant color and tangy-sweet flavor. It pairs wonderfully with various dishes, but in this recipe, we take cranberry sauce to a whole new level by incorporating it into a savory pie. The sauce's bright red hue adds a festive touch to your table, while its zesty taste provides a refreshing contrast to the richness of the Brie cheese.
  2. Creamy Elegance of Brie: Brie cheese, with its creamy texture and mild, nutty flavor, is the perfect complement to cranberry sauce. As it melts inside the fillo pastry, it creates a luxurious filling that oozes with indulgence. Brie's versatility makes it a staple for holiday gatherings, and in this pie, it takes center stage, offering a delightful contrast to the tangy cranberry sauce.
  3. Fillo Pastry - The Perfect Crinkle! : Fillo pastry, also known as phyllo or filo, is paper-thin and incredibly flaky. It provides a delicate, crisp texture that contrasts beautifully with the creamy Brie and luscious cranberry sauce. When layered and crinkled, it forms a visually stunning crust that's as impressive to look at as it is to eat. Fillo pastry is an excellent choice for those seeking a light and airy alternative to traditional pie crusts.
For a complete Christmas meal, consider pairing your Cranberry Sauce and Brie Fillo Crinkle Pie with a crisp salad or roasted vegetables. INGREDIENTS

375g Antoniou Fillo Pastry

150g unsalted butter, melted

2 eggs

1 cup thickened cream

Salt & pepper

500g good quality double brie cheese, cut into slices

6 figs, thinly sliced

3 sprigs fresh thyme

Before you begin this Filo Pastry recipe, take your packet of Filo Pastry out of the fridge, still in its plastic bag and allow it to come up to room temperature. Preheat your oven to 180 degrees Celsius, fan forced. Brush a 24cm by 34cm rectangular baking pan with butter.

Combine the eggs, cream, salt and pepper in a mixing jug and whisk until well combined. Set aside.

Lay two sheets of Filo pastry onto your workspace, one on top of the other, with the short sides of the Fillo Pastry facing you. Using your fingers, fold the pastry in a concertina design. Transfer the folded Fillo Pastry to your baking tray. Repeat with remaining Fillo Pastry, until your tray is full. Drizzle the melted butter over the tray using a Pastry brush.

Slot the sliced brie and figs into the Pastry layers. Sprinkle with thyme. Pour the cream and egg mixture over the Pastry.

Bake in the oven for 35 minutes, or until golden. Remove from the oven and serve immediately.

Enjoy! x
